At its most basic, Olive Oil is a fat that is found in olives. Native to the Mediterranean region, olives were harvested by Neolithic people more than 800 years before Christ was born. So it’s easy to say that the tradition of cooking with olive oil goes back, way back. At Gourmet Sardinia, we offer three different varieties of Italian Olive Oil. We have a cold pressed / extra virgin variety, our organic, and our traditional olive oil.

Olive oils come from several different parts of Europe and the United States. If you’re getting yours from Spain, you’re going to get a fruity / nutty flavor that is typically golden in color. If you’re buying Greek varieties, these typically have a strong flavor and aroma and is a green color. French olive oils has a pale color to is and a mild flavor. Our favorite, Italian, has a gorgeous dark green color and herbal aroma. If you’re buying from the United States, the oils there are typically light in flavor and color with fruity notes. It’s not uncommon for olive oils from different countries to be mixed together, but all of our oils come from the Sardinian region of Italy.

So what can you do with all those different extra virgin olive oils? Olive oils with strong flavors are typically used on fish, meat, in marinades,or to go on peppers or garlic. Medium oils tend to go well with cheeses and dipping in bread or in a vinaigrette. Ones with mild flavors can be used in cakes or in mayonnaise. If you have an oil that is simply labeled “Olive Oil” or “Virgin Olive Oil” then you have something that’s more suitable for frying and sautéing. You don’t typically want to fry or sauté with Extra Virgin Olive Oils as you’re going to lose a lot of the oil’s flavors.

As of April 2016, we have three different olive oils for you to enjoy. Our Cold Pressed / Extra Virgin Olive oil comes from two different varieties of fruit, the Semidana and Bosana. It is crafted without heat or chemicals. Efisio recommends that you try this with Spaghetti Pomodoro or Risotto with white mushrooms. Our simple Organic Olive Oil is one of the best that you can buy today and has a flavor that you’re not going to find anywhere else in the world. You can do anything you want with this olive oil. Our Traditional Olive Oil is recommended for people that are just getting started with Sardinian cuisine.
