Musto d’Uva is a traditional Sardinian grape reduction sauce. The production of Musto d’Uva is an ancient, meticulous craft that has changed little over time. Like so many Sardinian foods, it is produced seasonally, before the grapes began to ferment and before Winter comes to the island. To create Musto d’Uva, he unfermented juice of grapes (known as “must”) are cooked in large copper pots, until reduced to a rich, slightly sweet liquid.
The Musto d’uva sauce we sell here at Gourmet Sardinia comes from a single vineyard Sardinian Carignano grape variety that makes a very unique must. No additional sugar or preservatives are added. The result is a delicious sauce that is a bit like balsamic vinegar, without the acidity.
Sardinians use this sauce to add a hint of sweetness to just about anything. Try it mixed with extra virgin olive oil for a unique salad dressing. It makes a wonderful finishing sauce in our recipe for Garlic and Rosemary Lamb Chops. Drizzle a little bit over roasting vegetables for more depth of flavor.
